  • 食物與人們的生活密不可分,相當重要。2013年黑心油事件爆發,需要建立一個可以做為參考的食用油品資料庫。本研究使用甲醇對食用油進行萃取,以簡單快速且不需衍生的前處理,配合氣相層析質譜儀(GC-MS)建立81件植物油相對比例之長條指紋圖譜,79張動物油相對比例之長條指紋圖譜的植物固醇與生育醇衍生物指紋圖譜資料庫。接著將建立的資料庫搭配由階層式群集分析(HCA)、K平均分析 (K-Means)及主成分分析(PCA)組成的多階多變數分析系統進行油種的辨別;將芝麻油指紋圖譜配合DPPH清除自由基能力及總酚含量測試進行比對。
    將多階多變數系統應用於分析資料庫中的樣品,於植物油中3個階段中區辨出3項植物油再加入權重變化後2個階段中能再額外區分出2項植物油種,動物油中則是2個階段可以分出5項油種;並在植物固醇與生育醇衍生物指紋圖譜資料庫配合半定量的方式討論苦茶油的香樹脂醇比例差異、大豆油的儲存與生育醇的變化及雞油來源的不同和指紋圖譜的關係,並期望此資料庫未來能夠應用於各種類型的食用油分析,為食用油的辨別提供一個新的參考。


    Food is inseparable from people's lives and is very important. In 2013, the tainted oil incident broke out, and it is necessary to establish an edible oil database that can be used as a reference. In this study, methanol was used to extract edible oil, and a long-term fingerprint of 81 pieces of vegetable oil was established by gas chromatography mass spectrometry (GC-MS) with simple and rapid pre-treatment without derivatization. The relative proportion of animal oil was 79. A fingerprint database of phytosterols and tocopherol derivatives of long strip fingerprints. Finally, the established database is composed of hierarchical cluster analysis (HCA), K-means analysis (K-Means) and principal component analysis (PCA) to form a multi-order multivariate analysis system; the sesame oil fingerprint is combined with DPPH to scavenge free radicals and The total content test was compared. The multi-order multi-variable system is applied to the samples in the analysis database. In the three stages of vegetable oil, three plant oils are identified and the weights are added. In the two stages, two additional vegetable oils can be distinguished. In animal oil, Five oil species can be separated in two stages; and the difference in the ratio of aromatic resin alcohol of bitter tea oil, the storage of soybean oil and the change of tocopherol in the semi-quantitative manner of phytosterols and tocopherol derivative fingerprint database And the relationship between the source of chicken oil and the fingerprint, and hope that this database can be applied to various types of edible oil analysis in the future, providing a new reference for the identification of edible oil.
