本研究以台灣五個健康飲食推廣團體為研究對象，試圖瞭解當代台灣社會健康飲食知識的內涵。第一章指出營養學、中醫食療、生機飲食三種台灣健康飲食知識的主要知識基礎；第二章討論研究對象的釐清以及田野對象的篩選；第三章分別描述五個推廣團體，主要以團體的社會條件和現場課程情境為軸線，分析不同團體內知識的特殊性；第四章，以五個團體的資料為基礎，建構出一個台灣社會健康飲食知識的圖像；第五章，藉由理論視野重新思考健康飲食知識的意義和未來發展的可能性。
