本研究企圖探索台灣長期素食者的素食實踐軌跡。本研究以身體理論、實踐理論、以及自我規訓等理論作為概念工具，分析長期素食者如何透過身體感知來實踐其信仰及素食論述。在素食者的實踐與身體感長期交錯作用之下，素食者身心逐漸達到慣習，使得素食者主觀認為「正常」、客觀被認為「不正常」的素食實踐具有特殊的文化特質。在個人層面，素食與個人獨特生命經驗或生活態度作緊密扣連，無論素食作為一種飲食方式或是生活態度，都直接間接反映了個體身體、心理及各種素食論述的交錯影響。本研究發現每個個體可能同時被兩種以上的素食論述所影響。但是無論哪一種理由吃素的個體，都可能在身體感知及心理上有雷同的經驗過程，並且在這個經驗過程中再現某種論述。素食者在身體馴養、心理薰息的過程中，不斷再現他們認知中的素食論述與理念。素食論述及素食圈的特殊文化也造就了素食者與葷食者不同的「身體感知能力」。在社會層面，台灣越來越蓬勃的素食推廣活動也可看到素食文化的實踐軌跡。無論是透過各種媒體或是組織化的方式，素食推廣用多元化的論述再造了素食的合理性，同時在由私領域走向公領域的過程，也創造了素食在台灣的新時代意義。然而在這股新時代素食潮流之中，本研究也觀察到宗教傳統素食的力量仍然以相當有力量的型態沈潛在新潮流之中，只是用新潮流的面貌加以包裝及推廣。
