由於婦女就業人口的上升,單身人士的增加,致使家庭外食支出的比例增加,所以出現宅經濟的特殊現象,以台灣近年餐飲業營業額成長趨勢來看,可謂商機無限,是值得投入的產業。如果依循既有的餐飲業商業模式進行實體店面租賃,能獲利的空間不大,因此破壞式創新的、嶄新的商業模式應用在餐飲業或食品業是相當具有未來性。
本系統智能冰箱是以APP、雲端網路、及物聯網為技術基礎,以O2O模式、異業結盟為主要商轉模式,結合餐廳業者、運輸業者、超市業者、冷凍倉儲業者、銀行業者進行異業結盟,創建出嶄新的、適用於餐廳業者與食品業者的物聯網智能冰箱之O2O商業模式。
本研究以個案研究,探討餐廳業者、運輸業者、超市業者、冷凍倉儲業者、銀行業者進行異業結盟的可能性與實際運作方式。藉由個案分析,以美食外送平台之虛實整合餐飲服務:空腹熊貓、店家自營之虛實整合餐飲服務:摩斯漢堡、阿里巴巴-盒馬鮮生之虛實整合餐飲服務這三種美食外送的不同商業模式探討本系統實際商轉時所面臨的內在優劣勢與外在強弱勢分析。
本研究經分析,本系統必須以自身內部優勢以及外部機會,來抑制內部劣勢與外部競爭。本系統之內部弱勢為:1.倉儲科技自動化的成本較高;2.異業結合的擴點數量需求較多;3.需要較嚴格的冷凍技術,使食材達到一定的保鮮程度。本系統之外部競爭為: 1.新零售與餐飲O2O營運模式競爭者眾;2.許多相似app興起,競爭壓力增加。
Due to the increase in the number of women employed, the increase in single persons leads to an increase in the proportion of household food expenditures. Therefore, the special phenomenon of the home economy has emerged. Looking at the growth trend of the restaurant industry in Taiwan in recent years, it can be described as an infinite business opportunity and an industry worth investing. If we follow the existing catering business model for physical storefront leasing, there is not much room for profit, so the use of disruptive innovation and new business models in the catering or food industry is quite futuristic.
This system smart refrigerator is based on APP, cloud network, and Internet of things as the technology basis, with the O2O model, different industry alliances as the main business model, and the combination of restaurant operators, transport operators, supermarket operators, frozen warehouse operators, and bankers. The industry formed an alliance to create a new O2O business model for Internet of Things smart refrigerators for restaurant operators and food companies.
In this case study, case studies were conducted to explore the possibility and practical operation of restaurant industry players, transport operators, supermarket operators, refrigerated warehouse operators, and bankers to form alliances in different industries. Through case analysis, the food and beverage delivery platform integrated with catering services: the pandas of empty food, the self-integrated catering services of the store operators: Moss Burger, Alibaba-Boxer Fresh Foods, and integrated catering services. The model explores the intrinsic strengths and weaknesses and external strengths and weaknesses of the system when it is actually traded.
After analyzing this study, this system must use its own internal advantages and external opportunities to suppress internal disadvantages and external competition. The internal weaknesses of this system are: 1. The cost of automation of storage technology is higher; 2. The number of expansion points combined with different industries is more in demand; 3. The more rigorous freezing technology is needed to achieve a certain degree of preservation of food ingredients. The external competition of the system is as follows: 1. New retail and catering O2O operating model competitors; 2. Many similar apps rise, increasing competition pressure.
