台灣加入世界貿易組織後,政府開放民間製酒。不肖業者為了增加獲利,造假使用低成本之變性酒精或工業用酒精,作為製酒原料,經還原蒸餾後,添加香料來製作酒品售出。假酒難能被人體感官直接分辨,建立完整可靠的假酒鑑定方法,著實有其必要性。
本研究發展兩種氣相層析質譜術,以鑑定假酒。假酒分為假冒酒、侵權酒、毒酒、調製酒等四類。毒酒危害健康,嚴重者會致死,絕對不能喝,其他假酒成分與標示不符,明顯欺騙消費者。第一種質譜術利用氣相層析同位素比質譜儀(GC/IRMS),依釀酒原料植物的固碳方式不同,可分成碳三、碳四與景天酸植物,利用乙醇碳同位素比(δ13C)可區分其來源與混樣,用以鑑定假冒酒及侵權酒。實驗結果發現,米酒之δ13C正於-20‰者可判定為假冒酒。另一種質譜術利用頂空氣相層析質譜儀(HS-GC/MS),定量酒品中可能添加的變性劑或污染溶劑(甲醇、正己烷、乙酸乙酯、丙酮、氯仿),方法偵測極限為0.02 ppm,可用以鑑定毒酒。HS-GC/MS亦用於定性酒品中的揮發性香氣成分,可用以鑑定調製酒。最後應用本研究所開發之方法於政府查扣樣品59件與坊間購買41件各類酒品之分析,100件樣品中64件為假酒,其中14件為毒酒,甲醇皆未被測到超出標準。顯示本研究所開發之氣相層析質譜法具有完整確認與可靠檢驗之特點。
